PUMPKIN SALAD, APPLES, ARUGULA AND WALNUTS

Ingredients

  • 500 g de chair Pumpkin
  • 2 Granny apple
  • 50 g Roquette
  • 50 g of cerneaux Crushed walnuts
  • The juice of 1 Citron
  • 2 tbsp. soup Sunflower oil
  • 2 tbsp. soup Nut oil
  • Salt and pepper

Instructions

  • Peel the pumpkin and cut into strips with a thrift.
  • Wash, dry the apples, remove the hearts and slice them. Sprinkle with half of the lemon juice. Wash and squeeze the arugula.
  • Emulsify the two oils with the remaining lemon juice, salt and pepper.
  • Divide the pumpkin strips into four plates. Sprinkle with slices of apple, arugula and walnuts.
  • Sprinkle with vinaigrette. Serve immediately.
