Ingredients
- 500 g de chair Pumpkin
- 2 Granny apple
- 50 g Roquette
- 50 g of cerneaux Crushed walnuts
- The juice of 1 Citron
- 2 tbsp. soup Sunflower oil
- 2 tbsp. soup Nut oil
- Salt and pepper
Instructions

Peel the pumpkin and cut into strips with a thrift.

Wash, dry the apples, remove the hearts and slice them. Sprinkle with half of the lemon juice. Wash and squeeze the arugula.

Emulsify the two oils with the remaining lemon juice, salt and pepper.

Divide the pumpkin strips into four plates. Sprinkle with slices of apple, arugula and walnuts.

Sprinkle with vinaigrette. Serve immediately.
