POACHED WHITE PEACHES, POMEGRANATE ICE CREAM

Ingredients

  • 4 Ripe flat peach
  • 1 Citron
  • 1 Grenade
  • 1 brin Verbena
  • 150 g Caster sugar
  • Pomegranate ice cream

Instructions

  • Prepare the syrup: in a saucepan, let simmer for 5 min over low heat 50 cl water with the sugar, 1 tbsp. tablespoon of lemon juice and verbena. Peel the pomegranate. Put 1 tbsp. seeds in the syrup and continue cooking for 5 minutes. Filter. Pour the syrup into the pan.
  • Prepare the peaches: rinse them, wipe them off, remove the top third, remove the kernel. The lemon’s. Make them poach 5 min in the syrup by turning them several times delicately. Take off heat and let cool.
  • When serving, place peaches in cups. Add some pomegranate seeds. Top with syrup and place in the center of each peach a small scoop of pomegranate ice cream.
