EASY Roasted Artichoke Hearts with Lemon-Garlic Aioli

EASY Roasted Artichokes with Lemon-Garlic Aioli ~ make the perfect snack or appetizer while dinner is getting ready! Healthy, delicious and require no prep work at all!

  • 2 ( 9-ounce) packages frozen artichoke hearts, defrosted
  • 1 to 2 Tbsp. extra-virgin olive oil
  • ¼ tsp. kosher salt
  • optional: fresh black pepper, to taste
  • olive oil cooking spray
Creamy Lemon-Garlic Aioli:
  • ¼ cup light mayonnaise
  • 1 tsp. minced fresh garlic
  • 1 Tbsp. lemon juice
  • ½ tsp. grated lemon zest
  • 2 tsp. extra virgin olive oil
Lemon-Garlic Olive Oil Aioli:
  • ¼ cup extra virgin olive oil
  • ½ tsp. grated lemon zest
  • 1 tsp. minced fresh garlic
  • 2 tsp. lemon juice
  • ⅛ tsp. fresh cracked black pepper
  • dash of salt

  1. Preheat oven to Roast at 400 degrees.
  2. Lightly spray a large roasting pan with cooking spray. Spread artichoke hearts in a single layer. Drizzle with extra virgin olive oil and some salt over them.
  3. Place the pan on the center rack in the oven. Roast for 25 minutes.
  4. Remove and transfer to a serving dish and serve with lemon-garlic aioli on the side.
  5. Choose one or the other aioli. Both are delicious with these hearts.
  6. Serves 6
Creamy Lemon-Garlic Dip:
  1. Combine all the ingredients in a small bowl. Transfer to a small dip dish.
  2. Serve dip with warm artichokes hearts.
Lemon-Garlic Olive Oil Dip:
  1. In a small sauté pan, add all the ingredients and heat over low heat for about 2 to 3 minutes. Transfer to a small dipping dish. Place it in the center of the serving platter with warm artichoke hearts and serve immediately. Best when served warm.
